Black Bean Brown Rice Soup
2 cans (15 oz.) black beans, undrained, divided
3 cups water
1/2 cup chopped onion
1 envelope dry Italian dressing mix
1 1/2 cups instant brown rice, uncooked
Blend 1-1/2 cans beans in blender until smooth. Pour into large saucepan.
Add remaining beans, water, onions and dressing mix; stir until well blended. Bring to boil on medium-high heat.
Stir in rice; cover. Simmer on low heat 5-10 min. or until heated through; stir.
I shredded some cheddar cheese on top of mine and ate it with tortilla chips. It was DELICIOUS. And the leftovers are really good, too, so I had it for lunch almost everyday this week!
My sister Abigail just shared this song with me today and I then I listened to it about 5 times in a row. And I'm still listening to it. (It's more about the song than the video, just FYI.)
