YOU GUYS, today is my last day of work. I am very excited and very much looking forward to a week off before school starts. So much change happening right now, it's exciting!

One of the best things I did in Virginia was make cookies with my 2-year-old nephew Josh. We did it twice because we had so much fun and the cookies were so delicious. Here was my favorite recipe:

Double Chocolate Dream Cookies


Ingredients

2 1/4 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup (2 sticks) butter, softened
1 cup packed brown sugar
3/4 cup granulated sugar
1 teaspoon vanilla extract
2 large eggs
chocolate chips
Guittard green mint chips (Supposedly, these are only available in Utah. I brought some to my sister because I love her.)
For the chips: you need 2 cups worth of chips and you can do whatever ratio you want. You can do half chocolate and half mint, or more chocolate than mint, or more mint than chocolate, or all mint, or all chocolate. It's up to you. Go crazy.

Directions
Preheat oven to 375° F.

Combine flour, cocoa, baking soda and salt in a small bowl. Beat butter, brown sugar, granulated sugar and vanilla extract in a large mixing bowl until creamy. Beat in eggs for about 2 minutes or until light and fluffy. Gradually beat in flour mixture. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 8 to 10 minutes or until cookies are puffed. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
