eat:

It was my turn again to bring food to work today. This time around we are doing appetizers so I made Cowboy Caviar.

Cowboy Caviar

2 cans black beans, drained

2 cups frozen corn, thawed

2 cans Ro-tel tomatoes, drained

2 avocados, diced

1 green pepper, diced

1 bunch green onions, chopped

garlic salt to taste

1 bunch cilantro, leaves chopped

1/4 cup Italian dressing

Mix it all up and refrigerate for a little while so the flavors soak in. Enjoy with tortilla chips!

I'm going to Virginia tonight and part of my vacation is an overnight trip to DC so I need a good outfit for walking in the the heat and humidity. I'm thinking toms with a skirt. Is that crazy?
