My sister spent the night on Friday for a girls' sleepover and we needed chocolate. After searching through all of our recipes on Pinterest we decided on this one. Probably one of the best choices I've ever made. Neither of us wanted to go to the store so we had to make a couple adjustments to make it work.
Cake
2 cups of sugar
3/4 cup Hershey's cocoa
1 teaspoon baking powder
2 eggs
1 cup strong black coffee*
1 teaspoon vanilla extract
1 3/4 cups all purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 cup buttermilk (or lemon juice and milk)
1/2 cup vegetable oil
*I used 2 tsp. cinnamon and 1 cup hot water.
Frosting
2 oz unsweetened chocolate, melted and cooled
3 3/4 cups confectioners sugar
1/2 cup of butter*, softened
3-4 tablespoons milk
1 teaspoons vanilla
*I used almost twice as much butter and added sugar until it had a good consistency.
Here's what to do...
Heat oven to 350 degrees. Grease and flour two 9 inch round baking pans.
Stir together sugar, flour, cocoa, baking soda, baking power and salt in large bowl. Add eggs, buttermilk, coffee, oil and vanilla. Beat on medium speed for two minutes. Pour batter evenly into prepared pans.
Bake 30-35 minutes or until toothpick comes out clean. Cool 10 minutes. Remove from pans to wire racks. Cool completely.
For frosting, combine sugar, butter, milk, vanilla. Beat until creamy, 1-2 minutes. Add chocolate. Add more milk if necessary to reach desired consistency.

It's about time to make that cake again. Wish we could be making it together :(. I guess we could make it together just on opposite sides of the country at the same time :). Miss you!
